<i>Roscos fritos</i> (Spanish-style doughnuts)

- Ingredients
- 12 eggs
- 1/2 kg sugar
- 1/2 ltre sunflower oil
- Grated lemon rind
- Around 2 kg sugar
Method
Whisk the eggs whites until stiff. Add the yolks and fold in carefully so the whites will stay stiff. Fold in the sugar, oil, flour and grated lemon rind.
Heat oil in a deep frying pan.
Shape the dough into doughnuts and fry in the oil.
When golden, remove from the pan, drain on a paper towel and sprinkle with sugar.
Allow to cool before serving.
